Wine Castel Sallegg, “Sallie” Rose, Vigneti delle Dolomiti IGT

Castel Sallegg, Gewurztraminer, Alto Adige DOC is an exquisite dry white wine made from the Gewurztraminer grape variety, which is grown on warm lime-sandy soils interspersed with gravel and sandstone near Lake Caldaro in Alto Adige, the northernmost wine-growing province of Italy. Wine was produced in this area before the arrival of the Romans, and some evidence indicates that wine production dates back to the Iron Age. Winemaking continued to develop into the Middle Ages thanks to the dedicated care and hard work of the monastery employees. The vineyards are located at an altitude of 230 meters above sea level. The vines are processed according to the Guyot system. Harvested when the berries reach optimum ripeness. At the winery, the berries are cold macerated for 4-6 hours, followed by fermentation at a controlled temperature in stainless steel tanks. The wine is also aged in steel containers on fine lees for 4 months. The potential of the wine is at least 5 years.
