Small batches of grapes are sorted by maturity and vinified separately. Maceration and spontaneous fermentation is carried out in open-top fermenters, the pulp cap is punched 1-2 times a day for 3 weeks. The wine is aged for 22 months in 225-liter French oak barrels, and then bottled manually without filtration. A total of 4773 bottles were filled, which were still in the cellar for 18 months before release. The optimal period for using the Keermont, Cabernet Sauvignon, 2014 vintage is in 2018-2030.
