Sale! Dry red wine La Giuva, “Il Valpo” Valpolicella DOC expresses the typical and traditional style of Valpolicella with a good structure and a wonderful aromatic bouquet. The wine is made from a blend of three grape varieties – Corvin, Rondinella and Corvinone, collected from the youngest vineyards in the economy. The average age of the vines is 7 years. Harvesting is carried out when the berries reach the optimum level of ripeness in small wooden boxes. At the winery, clusters of varieties Corvin and Rondinella wither for a week. Then the fruits are separated from the ridges and subjected to vinification. Fermentation is carried out in stainless steel tanks at a temperature of 2223 . Maceration lasts 10 days. Malolactic fermentation and subsequent aging of the wine for three months at a natural external temperature take place in steel tanks. Bottling is carried out in late January – early February.
The annual production volume is about 10,000 bottles.
