Sale! Mythopia, “Disobedience” is a natural wine made from the Fendan grape variety, better known under the French name Chasselas, which is grown in organic and biodynamic vineyards in Valais. Valais is the largest wine region in Switzerland, with about one third of the country’s total wine production coming from this region. The vineyards have a southeastern exposure and are located on a hill, which gives the vines access to intense alpine sunlight. The climate here is relatively dry, but the vines do not lack life-giving moisture thanks to the alpine melt water. The soils are a mixture of shale, gravel and glacial deposits with good drainage properties and rich in minerals. The average age of the vines reaches 30 years. The grapes are harvested by hand and partially peeled from the stalks. Fermentation with natural yeast takes place in 1000 liter stainless steel tanks for about 12 weeks. This process is accompanied by regular pijage, which ensures better contact of the wort with the pulp and produces intensely colored and tannin-rich wines. The wine is aged in 225-liter oak barrels for 4 years without batonage. The wine is bottled without filtration and sulfur. The result is the orange “Disobedience” wine that made Mythopia famous in the wine world. “Disobedience” runs counter to all current academic understanding of what a good wine is. Disobedience does not always lead to new understanding, but new understanding is always the result of disobedience.
