Sale! “Iugum” Merlot-Cabernet Sauvignon – a dense red wine, which consists of a blend of Merlot grapes (70%) and Cabernet Sauvignon (30%). Wine impressive maturity, balance and elegance, and rich shades of fruit and velvety tannins give it charm. Wine is able to develop in the bottle for decades, and over time its taste will only get better. The first wine “Iugum” was released in 1995 and to this day, according to many experts, it is considered one of the best red wines of Alto Adige.
The name of the wine “Iugum” in Latin means “yoke or yoke”, by which a pair of oxen pulling a plow (shown on the label).
Vineyard Iugum, an area of 1.1 hectares, it grows on the slopes of Magre near the village of Margreid in Alto Adige, and is one of the warmest areas of the region. It dominates the soil with a high content of limestone and clay, which contributes to the cultivation of two Bordeaux grape varieties – Merlot and Cabernet Sauvignon. The vines grow at an altitude of 300 m above sea level, at the same time have the eastern and south-eastern exposure. Planting density of 7,000 vines per hectare. Merlot grapes are harvested from mid-September, and the Cabernet Sauvignon – the second decade of October. Each variety is vinified separately. Destebliruyut grapes, leaving the berries whole. Maceration is carried out in an open wooden vats capacitance Ch 40 at a controlled temperature of 25 C for 10 days to conduct pizhazha (dipping cap wort), 2 times per day. Further, Merlot and Cabernet Sauvignon are malolactic fermentation in oak barrels. Cabernet Sauvignon aged 12 months in new barrels and Merlot – barrels in the second and third year of filling. Thereafter, two kinds of mixed and wine for 60 days kept in stainless steel tanks, and then bottled. Followed by 24 months of aging in the bottle, after which the wine is ready for implementation. The long process of wine production, which ends just after 4 years after the harvest, leading to the creation of a mature beverage, which weaves a wide range of fruit shades, decorated with silky tannins. Wine is recommended to decant 1 hour before serving. Wine can be stored in the bottle until 2025.
