Initially, there grows a local red grape variety, but Peter dipoles, the founder of the company, from 1988 to 1991 completely replaced it with an international variety of Sauvignon Blanc. Vineyard area of 3 hectares, exposure – east-north-east and south, the altitude of 550-600 meters. This rather high position of vines contributes to full maturity, without losing acidity and varietal aromas. In the process of making wine the grapes are fermented in large wooden barrels made of acacia in volume 19-58 ch for 10 days at a controlled temperature of 22 C. Then the wine is left to mature on the lees in the barrel until May. In the first 3 months batonnazh carried out every 10 days. Then the wine is bottled and remains in the basement until January.
