The term “Ripasso” refers to the production process by which fermented wine which is a blend of three regional red grape varieties – Corvina, Rondinela Kroatina and placed in drums containing precipitate from Brody Amarone. This process (“repassing”) gives the drink color, texture and taste. Furthermore, the pellet is secondary fermentation of wine, which increases the content of alcohol in the beverage. Ripasso wine – another symbol of wine from the Veneto region, although it is less well known than the Valpolicella and Amarone, however, shares features of both wines.
The grapes for “Monti Garbi” is grown on the slopes of Monte Gharbi, at an altitude of about 300 meters above sea level. The foundation soil of this region – sand and clay with a lot of white calcareous subsoil. The grapes are harvested by hand in October, when it reaches optimum maturity for making wine. Grapes are gently squeezed by pneumatic press. Fermentation takes place at a controlled temperature for 8-12 days. On technology Ripasso wine undergoes repeated fermentation on the lees of wine Amarone. This gives the drink the complexity and increases the alcohol content of 1-1.5%. The wine aged for 15-16 months in 500 liter French oak barrels, 30% of which – the new, and another year in bottles after bottling. Storage capacity of wine is 10 years.
Winery Tenuta Sant’Antonio belongs to four brothers – Titian, Armando, Paolo and Massimo Castaeda. The winery is located in the eastern part of the Valpolicella area called Monte Gharbi, on behalf of the hill, near which it is located. Vineyards cover an area of 50 hectares, 20 hectares of which went to the brothers inherited from their father Antonio Castaeda, and 30 hectares were purchased by the brothers in 1989. The vineyards are planted along the slopes of Mezzana, Laban and San Martino Bon Albergo at an average altitude of 350 meters above sea level.
