Harvest for wine production is carried out manually at the end of September. The grapes are subjected to a slow fermentation and insistence on the skin, with minimal use of sulfur dioxide. The fermentation process takes place in special cement tanks, then the wine is placed in a large 225-year-liter barrels for aging for 12-14 months. After that, the wine spends 12 more months in the bottle.
